Ingredients:
25 nos potatoes
salt to taste
Corn flour -1-2 tsp
Oil -2 tsp
For cajun sauce:
1 cup mayonnaise
1 tbsp sweet chilli garlic sauce
1 tsp chilli flakes
1.5 tsp garlic powder
1 tsp mixed herbs
1/2 tsp pepper
1/4 tsp red chilli powder
1/3 to 1/2 cup milk
1/4 mint powder or few chopped mint leaves
Pink salt to taste
For garnish:
onion finely chopped
coriander leaves
Instructions
Take around 25 small potatoes rinse in water atleast 3-4 times or until the water is completely clear.As we are adding potatoes with skin make sure ther is no dirt at all.
Pressure cook for 2 whistles(in high flame).Check the doneness it should not be mushy but soft when pricked.Place all the potatoes on a chopping borad - use a flat base laddle or with hands and press it.Do not apply more pressure.
Repeat to finish for all potatoes,Set aside.Take a bowl add cornflour and oil and potatoes and toss till fully coated.
Pre heat the air fryer at 180 degree for 5 minutes and place the coated potato in air fryer and heat for 10 minutes
Take a bowl add all the ingredients listed under 'for cajun sauce' and mix well. Then add milk little by little to form a creamy flowing sauce.
Sauce should be pourable.
Heat a wok and add the sauce and add little water so that it doesn’t stick to the pan and sauté for 3 minutes. Add the air fried potatoes and gently mix without breaking and are fully coated
Now on the serving plate place the crisp potatoes Garnish raw onion,coriander leaves and serve immediately.
