Carrot rice:
Ingredients:
•1 -2 small carrot, peeled and finely chopped
•1 tbsp oil/ghee
•1 Onion finely chopped
• 1/2 tsp pink salt, garlic
•1 - 2 tsp Kashmiri red chilli powder
1 medium cup boiled rice
4 tbsp fresh coconut shredded
1 tsp lemon juice
Method:
Take a pan and heat oil, then add onions and cook until it turns translucent. Add garlic and sauté for 2 minutes. Add carrot, coconut,lemon, salt, red chilli powder and cook ( let it be a bit crunchy). Switch of the gas add the rice and mix well.
Garnish with coriander.
