Coconut Rice

Ingredients:

•1 cup rice

•1 to 1 and half cup grated coconut

•Pink Salt as per taste

•1-2 green chillies

•3/4 red chilli

• 1-2 tbsp oil/Ghee

•1/2 tsp mustard

• 1/2 tsp cumin

• 1 pinch hing

•1 tbsp chana dal

•1/2 tbsp urad dal

• 1 tsp ginger chopped

• 12 to 15 cashews and kishmish


Method:

Cook the rice and let it cool down completely. Heat oil / ghee in a pan. Add mustard, cumin, chana dal, urad dal, kishmish, cashews and red chilli. When the nuts are golden, then add green chillies and finely chopped ginger. Cook this on low flame then add hing . Switch off the gas and add the rice,grated coconut and salt and mix it well. Garnish with coriander.


Serve with pomegranate rasam.
