Corn Fritters

1 corn cob(remove kernels)

Some finely chopped ginger

Some finely chopped green chillies

3/4 th cup water

Salt

Some finely chopped carrots

Some finely chopped spring onions/red onions

Some finely chopped coriander

1/2 tsp turmeric powder

Some ajwain

1 tbs gram flour(besan)

2 tbs semolina(suji/rawa)

Oil


Method:

Take a corn cob, remove all corn kernels

Keep 2 tbs corn kernels in a bowl and

put rest in the mixer jar.

Add some finely chopped ginger

(garlic is optional) Add some finely chopped green chillies

Add 3/4 th cup water

and grind it well

Pour the mixture in the same bowl of corn kernels

Add some salt

Add some finely chopped carrots

(capsicum/cauliflower/cabbage/bottle gourd – optional)

Add some finely chopped spring onions/red onions

Add some finely chopped coriander

Add 1/2 tsp turmeric powder

Add some ajwain

(crush with hands)

(You can also add red chilli powder/garam masala)

Add 1 tbs gram flour(besan -for binding)

Add 2 tbs semolina

(suji/rawa for crisp – rice flour is optional to suji) and mix it well.

Rest the batter for 15 mins to soak the mixture well.

(Add less than 1/2 tsp fruit salt/a pinch of baking soda –

optional for fluffiness) Mix it well with the help of spoon for five mins to get good aeration in the batter.

Further heat up appam pan

put some oil in all cavities and put batter in each cavity.

Cook it on medium flame,

then flip the sides once it gets golden-brown colour.

Press on to lightly with a spoon and again leave for cooking.

Turn off the stove once both the sides are cooked well.

Your Crispy & Yummy Sweet Corn Fritters are ready.

Serving it warm tastes awesome with green chutney/tomato ketchup/mayonnaise.
