Cream of Mushroom 🍄 Soup
Ingredients
2 tablespoons butter
1 tsp olive oil
1 pack of sliced fresh mushrooms
1 medium size chopped onion
1 medium size potato
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups milk
1 cup half-and-half cream
1 cup vegetable stock/water
1-2 bay leaves
Few strands of parsley
Method:
1. Take a pressure cooker add oil, butter. After the butter melts add the bay leaves and garlic and sauté for 2 minutes.
2. Add chopped onion and cook till translucent.
3. Add the mushrooms and potato and sauté for 3-4 minutes.
4. Add flour and mix and sauté till raw smell is gone.
5. Add milk and water and stir. Make sure there are no lumps.
6. Close the cooker and wait till 2 whistle.
7. After removing the pressure take a blender add the mixture and blend to smooth paste. Remember to remove the bay leaves.
8. Take a pan and boil the mushroom paste. Add pepper, salt, cream and finely chopped parsley. Add water to adjust the consistency.
Garnish with chopped and fried mushroom, chopped parsley and cream. Serve hot
