Crispy vegetables 🌽 🥦

Serves: 4


Ingredients:

• Refined flour (Maida) 1 cup

• Corn flour ½ cup

• Salt to taste

• Black pepper a pinch

• Water as required

• Carrot ½ cup (diced)

• Baby corn ½ cup

• Broccoli ½ cup

• Mushroom ½ cup

• Potato ½ cup (diced)

• Capsicum ½ cup (diced)

• Onion ½ cup (petals)

• sesame Oil 1 tbsp

• Garlic 2 tbsp (chopped)

• Ginger 1 tbsp (chopped)

• Spring onions 1 tbsp (chopped)

• Sweet chilli garlic sauce 4 tbsp

• Red chilli sauce 2 tbsp

• Ketchup 2 tbsp

• Spring onion greens 1 tbsp


Method:

• In a mixing bowl add the refined flour, corn flour, salt & pepper, whisk well to prepare a smooth & thick batter and mix well.

• Add all the vegetables in the batter, mix and coat well.

• Pre heat air fryer for 5 minutes at 180 degrees for frying, first fry on medium high flame for 3-4 minutes, spread the veggies in air fryer tray and fry 10 minutes or till veggies are crispy.

• Heat oil in a wok add garlic, ginger, spring onions, green chillies and sauté them on a high flame for a minute.

• Add all the sauces, white pepper and sauté on high flame for a minute.

• Add all the fried veggies and toss well to ensure the fried veggies are coated well with the sauce.

• Garnish with few freshly chopped spring onion greens & sesame seeds

• Serve hot and crispy.
