Grilled creamy capsicum:
Ingredients:
1. Red/yellow/ Green capsicum
2. White sauce
3. Olive oil
4 sweet corn -1/4 cup
5. Mozzarella cheese shredded-1/4 cup
Method:
1. White Sauce:
1. 2 tablespoons Butter, with salt
2. Garlic 2 pods crushed
3. 2 tablespoons Rice flour/ all-purpose
4. White pepper- 3/4 tsp
5. Red chilli flakes -1/2 tsp
6. Full cream -1/4 cup(optional)
7. Processed cheese (Amul) -1 slice
8. Olive oil -1tbsp
9. Milk - 1/2 litre
Method:
Step 1
In a small saucepan over medium heat, melt butter with oil. Add garlic, flour and stir until the butter and flour are well combined. Add white pepper, chilli flakes and sauté for 2 minutes. Pour in half milk, stirring constantly as it thickens. Add the cream, cheese and stir. Add more milk depending on desired consistency.
Tip: You can add sweet corn or mushroom or broccoli 🥦 to the sauce while cooking.
2. Capsicum cups:
1. Cut the capsicum into half from the bottom to get cup shape.
2. Fill the capsicum with white sauce( sweet corn added in the sauce while cooking )
3. Top the capsicum with mozzarella cheese
4. Brush the capsicum with oil from outside
5. Place all the filled capsicum in the grill safe bowl and cook it on grill mode in microwave or in OTG till the cheese starts to change colour.
