Guti Aloo
Assam is not only famous for its flavorful tea cultivation, but also for its unique cooking style that features less oil and spices. What makes their cuisine more unique is the fact that the vegetables can be either fresh or even can be in preserved forms like dried or fermented.

You thought baby potatoes are small? Guti aloo – a well kept secret of Assam – takes the size of the root several notches lower, and quite literally to that of gutis or marbles.
These (Guti Alu) are not the baby potatoes that we see in a regular store or a supermarket.They are smaller than them. Sometimes they are pink in colour.
Guti aloo is a local ingredient of Assam.
Some says it Guti Aloo and some says Saru Aloo in
Assamese but it is the same tiny Assamese potatoes with an earthy flavour. It is called Baby Potatoes in English.
Traditionally eaten as a sukha bhaaji, a dry preparation of the potato with seasoning and tempering, the seasonal relish (November to March) is not heard of much beyond the north east, where it grows. It has only recently begun to make its way to the western shores of the country.
