Pineapple Gojju/Curry
Ingredients:
Pineapple-1 small size finely chopped
Pink salt as per taste
Jaggery as per taste
Ghee -2 tsp
Mustard seeds -1 tsp
Curry leaves-5
Hing a pinch
Water -1 glass
Kashmiri red chilli powder as per taste
For Grinding:
TIL- 2 tsp
Urad Daal - 1tsp
Dry coconut- 3tsp
Jeera- 1/2 tsp
Method:
Take a small pan and dry roast all the ingredients until it releases aroma. Blend all the ingredients to make a fine powder.
Curry Method:
Take a pan add oil and heat it. Add the mustard seeds, hing and let it crackle. Add curry leaves and add the finely chopped pineapple and mix well and sauté for 3 minutes. Add water when pineapple becomes soft and add the dry powder, tamarind and jaggery, chilli powder,salt and let it boil till ghee leaves the side.
Garnish with pineapple slice and coriander.
Serve with hot rice and ghee
