Raw Mango Rice

Raw Mango Rice with a twist recipe


Usually Lemon rice is a traditional South Indian recipe which is very quick to prepare & made on festivities & special occasion. This is similar dish where lemon is replaced with tangy raw mango.


INGREDIENTS

1. 2 tbsp oil

2. 2 tbsp peanut

3. 2 tbsp cashew

4. 1 tsp mustard

5. 1 tsp urad dal

6. 1 tsp chana dal

6. 1 dried red chilli (optional)

7. 1 inch ginger, finely chopped

8. 2 chilli, finely chopped

9. pinch hing / asafoetid

10. few curry leaves

11.¼ tsp turmeric

12. 2 cup cooked rice

13. ½ tsp salt

14. 2 tbsp coriander, finely chopped

15. 1/4 fresh grated tangy raw mango

16. 1 Capsicum finely chopped

17. 2 tbsps spring onion(optional)

18. Citric zest (lemon or Musambi) little

19. 3 tbsp fresh grated coconut

20. 3 tbsps grated carrot(optional)


INSTRUCTIONS:

1. Take a large kadai heat 2 tbsp oil and roast 2 tbsp peanut, 2 tbsp cashew until it turns golden brown and crunchy.keep the fried peanuts and cashews aside.

2. In the same oil add 1 tsp mustard, 1 tsp urad dal, 1 tsp chana dal, 1 dried red chilli.

also add 1 inch ginger, 2 chilli, pinch hing and few curry leaves.

splutter the tempering on medium flame. Add in ¼ tsp turmeric and saute slightly. Add the chopped capsicum and sauté for few minutes. Make sure the capsicum is crunchy and not over cooked and switch off the gas.

3. Add 2 cup cooked rice and ½ tsp salt & citric zest & mix well making sure everything is well combined. Add 2 tbsp coriander, carrot and 2 tbsp grated raw mango, coriander & spring onion, coconut & mix well.


Garnish with fresh coriander and citric zest.
