Stuffed tomato with potatoes, paneer & arbi

Ingredients


Potatoes - 2 medium-sized boiled

Arbi - 1-1/2 boiled and smashed

Paneer- 1/4 cup grated

Pink Salt - as required

Red chili powder - 2 teaspoon

Coriander powder - 2 teaspoon

Turmeric powder - 1/2 teaspoon

Amchur/ dry mango powder - 1/2 teaspoon

Green chili - 1 finely chopped(optional)

Fennel seeds - 1/2 teaspoon

Tomatoes - 6 to 7 medium-sized

Oil - 2 tablespoons

Cumin seeds - 1/2 teaspoon

Mustard seeds - 1/4 teaspoon

Water - as required for the consistency

Cheese - as required for garnishing

Coriander leaves - finely chopped as required for garnishing


Instructions


1. Take a bowl, add boiled potatoes, arbi & paneer and mash it.

2. Add salt, red chili powder, coriander powder, turmeric powder, amchur powder, green chili, and fennel seeds and mix all together

3. Take out the top of the tomatoes and scoop out all the pulp. Set this pulp aside as we will be using this to make the gravy.

4. Fill the tomatoes with the stuffing we had prepared earlier. Do not overfill the tomatoes with the stuffing.

5. Heat oil in a pan, add cumin seeds, and mustard seeds, roast it until it starts to crackle.

6. Now, add the pulp of the tomatoes that we had set aside.

7. Add the remaining stuffing in the gravy, which helps to thicken the gravy. Keep the flame medium.

8. Further, add water to it. Add red chili powder, turmeric powder, coriander powder, and salt. Cover and cook it for 2 to 3 minutes.

9. Per heat the air fryer for 5 minutes at 180 degrees

10. Place the stuffed tomatoes 🍅 in air fryer and heat it for 5 minutes or until done. Don’t over heat the tomatoes

11. Now, transfer gravy to the serving plate and place the tomatoes. Garnish it with cheese and coriander leaves.
