Tiranga Rice

Ingredients:

•1 cup rice

•1 to 1 and half cup grated coconut

•Pink Salt as per taste

•1-2 green chillies

•3/4 red chilli

• 1-2 tbsp oil/Ghee

•1/2 tsp mustard

• 1/2 tsp cumin

• 1 pinch hing

•1 tbsp chana dal

•1/2 tbsp urad dal

• 1 tsp ginger chopped

• 12 to 15 cashews and kishmish


Method:

Cook the rice and let it cool down completely. Heat oil / ghee in a pan. Add mustard, cumin, chana dal, urad dal, kishmish, cashews and red chilli. When the nuts are golden, then add green chillies and finely chopped ginger. Cook this on low flame then add hing . Switch off the gas and add the rice,grated coconut and salt and mix it well. Garnish with coriander.


Serve with pomegranate rasam.


Carrot rice:

Ingredients:

•1 -2 small carrot, peeled and finely chopped

•1 tbsp oil/ghee

•1 Onion finely chopped

• 1/2 tsp pink salt, garlic

•1 - 2 tsp Kashmiri red chilli powder

1 medium cup boiled rice


Method:

Take a pan and heat oil, then add onions and cook until it turns translucent. Add garlic and sauté for 2 minutes. Add carrot, salt, red chilli powder and cook ( let it be a bit crunchy). Switch of the gas add the rice and mix well.

Garnish with coriander.


Green rice:

Ingredients:

• 1 cup fresh coriander

• 1/2 green capsicum

1 cup broccoli

• 6-7 cloves garlic

• 1/2 onion

• 1-2 green chillies

• Water as required

• Salt and pepper

• Jeera powder

• Boiled rice

• 1-2 tsp oil/ghee


Method:

1. In a blender add coriander, chopped capsicum, onion, garlic and add a little water and blend it well.

2. In a pan add oil and add broccoli and sauté till it becomes a bit soft then add your green paste and add salt, jeera powder and pepper powder and sauté it for 3-4 minutes. Then add boiled rice and mix it well.

Garnish with coriander
